Are you feeling like a bit of a change from the normal crepe style pancakes with sugar and lemon?
Do you fancy something healthy and lovely that can take all the fruit toppings and maple syrup that you can throw at it?
With these delicious Banana and Oat pancakes, you’ll feel like you’re getting some goodness into yours and you families morning without depriving them of totally delicious pancakes.
Made from just 4 simple ingredients, these pancakes are low fat and use natural fruit sugars to make them taste delicious. No need for processed sugar, what you put on top of them though is up to you.
To serve 4 people
4 x bananas (if you have some that are starting to over-ripen you can put those in)
4 x eggs
90 grams (3oz) rolled oats
1 Tsp baking powder
Combine all of the ingredients in a blender and blitz until the mixture is smooth. If you want a very smooth mixture blend for a bit longer, you want to be breaking up the oats so they don’t give the pancakes a gritty texture.
Allow to stand for 10 minutes to allow the mixture to thicken. You can use this time to get your toppings sorted
Heat a non-stick pan with a little butter or oil until sizzling
Add spoonfuls of batter to the pan to make rounds approximately 12cm across. Cook on one side until you start to see bubbles appearing on the surface. Flip the pancake over with a spatula and cook on the other side.
Step 5: –
Continue cooking the batter until it’s all used up. You may want to cover the cooked pancakes to keep them warm whilst the others are cooking.
Serve with whatever takes your fancy. We enjoyed ours with warmed summer fruits (from frozen) and maple syrup but they’d taste amazing with bacon and maple syrup, banana and chocolate spread or traditional lemon and sugar.
